Weekend Cooking

This week, I did not cook a lot since my niece brought her dog over. He is so adorable. Can you tell he is ready for the camera? :-)



Banana wrapped with sticky rice and coconut milk.







Vietnamese rice rolls with Vietnamese ham, bean sprout and dried shallot, and fish sauce.


Peanuts sticky rice. Usually, people have this for breakfast in Vietnam.


Ingredients:
  • 1 cup boiled peanuts
  • 2 cups glutinous rice
  • 1/2 cup coconut milk
  • 1/2 teaspoon salt

  • For topping:
  • 1/2 cup shredded coconut
  • 2 Tablespoons crushed roasted peanuts
  • 2 Tablespoons sesame seeds
  • sugar - to taste
Method:
1) Soak sticky rice and raw peanuts overnight.
2) Boil peanuts in a separate pan until soft or crunchy. Depend on what you like.
3) Steam the sticky rice.
4) Once sticky rice almost cooked, add in the coconut milk.
5) Mix in the boiled peanuts.
6) Mix in the sugar and the salt.

Presentation: See below.

Scoop a small amount of sticky rice into the plate.
Top with shredded coconut, peanut pieces, sesame seeds and sugar.




Persimmon is in season right now. They are super sweet.

I just learned how to make this today. It's sweet, spicy and sour. What a combination. Trust me, you want to eat more after the first bite.

Sorry for getting back to you so late. I have been quite busy lately. The recipe is from one of the tudo forum. I have translated for you in English.

Ingredients:
4 apples (cut into 6 portions, and take out the core)
1 TBS Salt (to use in the cold water)
Chili peppers (2 or 3 depend on how spicy you want)
1 TB of salt (to use later on mix with cooked apples)
2 TB of sugar
Skewers (optional)

Methods:

1. Wash each apple, and have a big bowl ready filled with cold water.
2. Add 1 TBS of salt in the bowl. This is to prevent the apples from changing color.
3. Cut each apple into 6 portions, and place them in the bowl of cold water with salt. (The sour the apples, the better the result will be. You also want fresh apples.)
4. Boil a pot of water, put 1TB of Salt in.
5. Cut the chili peppers into small slices, and put aside. This is to mix with the apple slices later on.
6. Once the water gets boiled, put all the apple slices in the pot.
7. Stir it a few times, and pour the apples out. Don’t cook for too long.
8. Drain the apples, and add in sugar, salt and chilli pepper. (Rule of thumb: If you put one tablespoon of salt, you have to use two tablespoon of sugar.)
9. Mix well and then put in refrigerator.
10. They are ready to be eaten in 3 hours.

Note: If you use the skewers, please be careful. You don’t want to poke through your fingers and have blood all over the apples.
