Cantonese Lobster with Ginger and Scallion

I made Lobster for dinner tonight. It's so delicious. My Mother-in-law taught me how to make this. It's quite simple actually.



Add garlic, ginger and the white portion of scallions into the pot.


Stir fry it for a little while until fragrant, then add the lobster.




Add the spices.




Then add the starch and scallions.



And voila` you got your self a yummy lobster dish . This would go great with steam rice and a beer .


Ingredient: Two medium lobster (or crab), ginger (4 thumb size pieces), green onion (one), flour, cornstarch.
Spices:

A) Ginger (two thumb size pieces, crushed), cooking wine (one tablespoon).
B) Chicken Broth (one cup), cooking wine (2 tablespoon), soy sauce (2 tablespoon), sugar (one teaspoon), salt (pinch)

Method:

1) Clean, crack, and chop lobster into pieces. Marinate lobster with (A)
2) Heat up wok and add 3 cups of oil. Dust lobster with flour and deep fry lobster until it turns red. Set aside.
3) Julienne four thumb-size ginger and one green onion.
4) Heat up a wok. Add 3 tablespoons of oil. Add ginger and green onion from (3) and fry until fragrant.
5) Pour in Lobster and stir fry.
6) Add Spices (B) and cover wok and cook for 5 minutes.
7) Thicken sauce with cornstarch paste and serve.
