Pizzelle Cookies - Ba'nh Ke.p

I made some pizelle cookies today since I ran out of snack to munch on. This is a type of Italian cookies. However, I modified the ingredient a little bit and added pandan flavor to make it more Vietnamese style. They are very delicious and crunchy.



Check out different shapes and pretty flowers. Not only they are pretty to look at, but they are good to snack on too.

Ingredients:
1 ½ cup of sugar
3 cup of rice flour
1 can of coconut milk (13.5 oz)
1 teaspoon of vanilla or pandan paste
3 teaspoon of condense milk
2 large eggs or 3 medium eggs
1/2 cup of butter

Method:
In a bowl, beat eggs and sugar together
Add vanilla, butter, condense milk, and coconut milk.
Add rice flour, and mix well.
Follow direction on the pizelle cookie maker.
