Summer Fruit Tart

I always wanted to make a fruit tart, but don't know where to start. I found a recipe from the blog below, and decided to make it today.

Finally, I went to the grocery the other day and got all the ingredients. It was not that hard to make and it was FUN :-) You should try it. It's great to see the final product when you are done . Check it out.

The crust before put in the oven.

After you put in the oven for 20 minutes or so, it will look like this.

Added the custard cream filling into the crust.

Decorated all different kind of summer fruits. Check out the dragon fruit in the center.

This is the final product. What do you think?

I make some changes to the recipe below.
Ingredients for tart shell:
2 stick (1 cup of butter)
2 1/2 cups of flour
1/4 cup of sugar ( I only use 4 TB. It's depend on how sweet you want the tart shell.)
1 egg yolk
1/2 tsp of salt
1/2 tsp of vanilla ( I use 1 tsp of vanilla)
2 tbsp of cold water (optional) -- I didn't add any cold water.
In a mixer cream butter, sugar until creamy. Add in egg yolk, vanilla and salt. Mixed till well combined. On low speed add in flour to form into a dough. If the dough is too dry add some cold water.

Pinch some dough and press into the little tarts mould. Prick the tart shells all over with a fork and bake in a pre-heated 350 F oven for 20-25 min or until lightly brown. Cool the shells before filling it up with custard cream and fruits.
Ingredients for Custard Cream
6 eggs yolk
3/4 cups of sugar ( I only use 4Tbsp)
3 tbsp of custard powder ( I used Mango custard)
2 1/2 cups of milk ( I used 2% milk)
2 tbsp of butter
1 tsp of lemon zest
Note: I also added 1Tbsp of tapioca flour and 1 tsp of vanilla.
Mix all the above ingredients except for butter in a mixing bowl. Pour mixture into a heavy saucepan and cook over low heat, stirring constantly until thicken and bubbly.Remove from heat and stir in the butter. Place a plastic directly over the custard and chill before using it on the tarts.

To assemble the tarts
Some fresh fruits - cut small . You can use any fruits you like.
Custard creamFor Glaze :
3 tbsp apricot jam
4 tbsp of hot water
Put some custard cream into the shells and top it with some fresh fruits.Mix the jam and hot water and then brush it over the fruits.

It doesn't have to be a particular brand. As long as you find a box that labeled "mango custard", you're good to go :-) I bought it at a Korean market.
