Banana Bread

 
I am so bad with eating bananas these days, and they almost go rotten.  I was going to just make another banana bread.  However, this morning I had half of an orange for breakfast and still have the other half.  I decided to add orange juie and peel to my recipe.  It turned out wonderful.

Not only it's good, but it's smell great.  The orange peel gave the banana bread a great flavor.

 

Ingredients:
2 cups AP flour
3 soup spoon of sugar
1 1/2 tsp. salt
1 1/2 tsp. baking soda
5-6 very ripe large bananas, mashed (about 4 cups)
1/3 cup butter, softened
1/2 of an orange juice and
some orange peel
2 eggs
1/2 cups chopped walnuts or slice almonds (optional)
1/2 cups raisins or craneberry(optional)

Method:
Preheat oven to 350 degree. Grease the bund pan. Place dry ingredients in a large mixing bowl. Whisk a few times. Add wet ingredients. Blend on low speed and mix for three minutes on medium speed. Pour into prepared pan. Bake at 350° for 55-65 minutes in bundt pan or for 1 1/2 hours in loaf pan (toothpick will come out clean). Remove immediately from pan. Cool on wire rack.
