This dish is best eaten with raw vegetables and garlic lemony fish sauce. I added cha? ca' (fish cake) to make the dish looks more interesting.

Below is the iron mould for banh khot. This was a gift from my Mother-in-law.

Below is the perfect platter of banh khot. These savory rice cakes are crispy on the outside and moist on the inside. Yummy!
Below is the perfect platter of banh khot. These savory rice cakes are crispy on the outside and moist on the inside. Yummy!
Ingredients:
-1 bag of banh khot flour (little circle shrimp flour -- 12oz)
-3 cups of water
-2 cups of coconut milk
-8oz of mung bean
-1 lb of shrimps
-3 cloves of garlic (minced)
-1/2 tsp salt, pepper, sugar
-1TB of tumeric powder
-1 bunch of scallion (cut into small pieces)
-vegetable oil (use for the banh khot mould)
Method:
Mix batter:
-In a bowl, pour 1 bag of flour
-Add tumeric powder
-1/2 tsp of salt
-Add the scallions
-Let it sit for 30 minutes
Mung Bean:
-Pour 1/2 bag (8oz) of mung bean into a bowl.
-Add hot water
-Let it sit for 15 minutes
-Boil the mung bean until soft
-set aside
Shrimps:
-deveined 1 lbs of shrimps
-marninated with a little bit of salt, pepper, and sugar
-In a small pan, add some oil.
-Add the shrimps
-Stir fried until well done.
-Set aside in a bowl.
Banh Khot:
-Grease the banh khot mould with oil
-Pour the batter into each small mould
-Add about 1 tsp of mung bean
-Add 1 shrimp
-Wait until it's cook
-Serve with fish sauce and raw veggies.

I don't have banh khot flour mix. Can I use banh xeo instead? Your banh khot looks so good. I want to try tomorrow but don't want to go grocery shopping for banh khot flour. Thx. Amy

wow, banh khot! that is so awesome that you can make this at home. the iron mould is cool, which i think you can also make banh beo, right?
A few years ago, my son pestered me into buying the pancake puff mould that he saw on infomercial. I gave in and bought two moulds. I had to pay the shipping cost separately for each mould. Ouch.... and I could not make the pancake puffed into nice round balls. I gave up after the second attempts. When I saw TrucVy posted banh khot, I made them the very next day using the same pancake moulds. Finally, they are in handy. Google or check with Amazon. They don't charge shipping if order more than $25. I placed an order with them last week for Madeleine pans. Still waiting.....don't have the pans yet but happily anticipate for them. My next project is to make Madeleine cookies. They are extremely expansive at Starbucks and I have three kids to satisfy their sweet tooth.
