Apple Pie

I have three apples that I want to get rid of, but not sure what do do with it. Then this morning I surfed the net and found an apple pie recipe on the blog below. Of course I modified the recipe a little bit since I don't have all the ingredients.

http://www.mykitchensnippets.com/search/label/Pastries

Dough :
1 1/4 cups flour (I used 2 cups)
1/2 cup powder sugar
1/2 cup of butter (1 stick)
1/4 cup walnuts
1 egg yolk ( I used the entired egg because I don't know what to do with the egg white :-)

Method:
In a food processor, combine all the dry ingredients and pulse until it resembles coarse meal. Add the egg yolk and pulse until it form into a ball. Flattened it and wrap it in the plastic wrap and refrigerated it for an hour.

Then I use my hand and try to roll the dough out to cover the pan.

For the pie filling:
3-4 medium sized sweet apples - peeled, cored and thinly sliced
3/4 cup of heavy cream (I used half & half since I don't have any milk or heavy cream)
6 tbsp of sugar
1 egg yolk1 egg
2 tbsp of flour
1 tsp of vanilla.
1 tsp of cinnamon. (I added 1 tbsp of cinnamon also)

This is how I arranged my thinly slices of apples.

After an hour of baking, this is what the apple pie looks like. Surprisingly, it turned out great. This was my first attempt at baking an apple pie.

In the recipe, it said to use appricot jam to glaze the top of the pie. However, I don't have appricot jam. Instead, I have strawberry jam.

It's so tasty and yummy. My hubby loved it. He said it's perfect, not too sweet.
