We had this yesterday for dinner.
3 ½ cups coconut juice
3 tablespoons fish sauce
2 tablespoons Caramel Sauce or brown sugar
1 tablespoon finely chopped shallots or onion
1 teaspoon salt
½ teaspoon black pepper
3 hard-boiled eggs
3 green onions, cut into 2-inch lengths

Directions:
In a large, heavy saucepan, combine the pork, coconut juice, fish sauce, Caramel Sauce, shallots, salt, and pepper. Bring to a boil over medium-high heat, and then reduce the heat to maintain simmer. Cover and cook until the spareribs are tender and surrounded by a brown sauce, 45 to 50 minutes.Add the eggs and green onions to the pan, and simmer for another 15 minutes, turning the eggs gently. Remove from the heat, take out the eggs, and halve them lengthwise. Carefully return the eggs to the sauce, transfer everything to a serving bowl, and serve hot or warm.
We like tea eggs (hard boiled eggs with cracked shell, cooked in tea and soy) which are similar. We had them at a family dinner once and an American friend asked if they were from "tea birds"!

ReplyDeleteI had the tea eggs dish before. My parents usually made them. I believe it is a Chinese dish right? This version is Vietnamese. I put fish sauce instead of soy sauce :-)
